About the course

This course will enable you to develop the skills and knowledge to become a professional confectionery or patisserie chef. You will work in our student-led BR6 restaurant and state-of-the-art training kitchens with our expert chef tutors, as well as take part in master classes by some of the top chefs in the UK.

The course is very hands on and will focus on equipping you with very high level employability skills as well as a good level of English and maths skills.

  • Bake fermented dough and pastry dishes

  • Hot, cold and frozen deserts

  • Biscuits, cakes, sponges and scones

  • Chocolate, marzipan, pastillage and sugar products

  • Controlling resources and stock

  • Job opportunities in the hospitality industry

Assessment

  • You will produce a portfolio of evidence to show your progress

  • There are also test throughout the course to assess your theoretical knowledge

  • You will be assessed through real work experience in our BR6 Restaurant and training kitchens

Entry requirements

  • 4 GCSEs - grades A*-C (9-4) including English and maths
  • OR Professional Cookery Level 2 C&G Diploma – Merit or Distinction

  • Selection is by interview and internal tests

Moving forward

  • Employment as a chef in a professional patisserie, restaurant, café, shop or in other catering-related businesses and organisations
