Our chefs from BR6, the learner-led restaurant and bakehouse at London South East Colleges, recently swapped the training kitchen for Borough Market, one of London's most celebrated food markets, as part of a hands-on challenge designed to put their culinary skills and creativity to the test.
The task was to create a two-course meal entirely from scratch, starting with choosing and buying their own ingredients. With no set menu or prepared shopping list, learners had to explore the stalls, discover what was in season, speak to traders and decide which ingredients would work best together.
Surrounded by fresh produce from independent growers, specialist suppliers and food traders from around the world, there was plenty of inspiration. But the challenge was about more than finding great ingredients. Learners had to think carefully about flavour combinations, quality and how their choices would come together on the plate.
This reflects the way professional chefs approach menu development, using seasonal ingredients and available produce to shape their dishes. It also gave our learners the opportunity to develop important industry skills, from planning and decision-making to communicating with suppliers and thinking creatively under pressure.
Turning fresh ingredients into finished dishes
Back at college, it was time to turn those ideas into reality, and the finished two-course meals showed just how much creativity had gone into the challenge.
The menus were as varied as the market itself. Learners prepared golden roast chicken with seasonal vegetables, delicate fish served with fresh asparagus, and a vibrant soup accompanied by warm flatbread. For dessert, there were fresh citrus fruits topped with jewel-bright pomegranate seeds and a rich chocolate tart.
Every dish reflected the decisions made at the market stalls, from selecting the ingredients to preparing, cooking and presenting the final plate.
Working with ingredients they had chosen themselves, rather than following a set recipe, encouraged learners to take ownership of their dishes. They had to manage their time, balance flavours, adapt their ideas and pay close attention to presentation, all essential skills in a professional kitchen.
The challenge gave learners valuable experience of the full culinary process, from sourcing ingredients and planning a menu to delivering a finished meal. It also demonstrated how the skills developed during their training at BR6 translate into real-world hospitality and catering environments.
We are proud of the creativity, confidence and care our chefs showed throughout the experience. Opportunities like this are an important part of learning at BR6, helping learners build the practical skills, independence and professional mindset needed for their future careers.
